Vegetable Fried Rice with Bacon!

We always have left over rice in our house, and it’s been a while since we had fried rice so it was just the perfect time to have this dish!  I got the recipe from the Food Network book, I’m really determined to try and cook some of the dishes in the book so I won’t feel that it’s just another “waste” of money spent on cook books and cooking magazines.  I like the vegetable fried rice because the veggies are crunchy and add flavor and texture (not just the usually scramble eggs and rice). Instead of bacon I used a sukiyaki cut(pork), Hubby and I are trying to get healthy, and bacon is not helping us!

Vegetable Fried Rice with Bacon , serves 4(from Food Network magazine book)

Ingredients:

1 tablespoon vegetable oil

1/4 pound thick-cut bacon,cut into 1/4 inch pieces

3/4 teaspoon sugar

2 1/4 teaspoon soysauce

3 cloves garlic,thinly sliced

1   2inch piece ginger, peeled and minced

1/4 teaspoon red pepper flakes

1/2 head broccoli, florets and stalks cut into 1/4 inch pieces

5 cups cooked long grain white rice

1/4 cup low sodium chicken broth

4 large eggs

1 bunch watercress,stems removed

spicy mustard or chili sauce, for serving (optional)

1. Place a wok or large skillet over high heat. Add the vegetable oil and bacon and stir- fry until golden and crisp, about 2 minutes. Sprinkle the sugar over the bacon and toss. Add 1/4 teaspoon soy sauce (watch-out, the oil will bubble up) and continue to stir-fry until the bacon is glazed, about 30 seconds. Transfer the bacon to a bowl with a slotted spoon. Add the garlic, ginger and red pepper flakes to the drippings in the pan and stir fry until fragrant, about 30 seconds. Add the broccoli and cook until crisp, 2 to 3 minutes. Add the rice, the remaining 2 teaspoons soy sauce, the broth and glazed bacon. Toss to the heat through.

2. Push the fried rice to one side of the pan, crack the eggs into the other side and scramble until set, about 1 minute. Mix the eggs into the rice and stir in the watercress. Divide among bowls and serve with mustard or chili sauce, if desired.

Summer

We’ve been having nice weather here in WA lately, so we’ve tried to be more outside either to eat or play with Riley the schnauzer.  My parent in-law’s invited us for dinner earlier this week and we brought Riley with us.  It was a little stressful because he’s all over the place just sniffing and looking for trouble!  I took a lot of pictures in their yard because my MIL’s flowers/plants are blooming like crazy and so pretty:)

Our 4th of July!

We had fun celebrating the 4th with my husbands family!  We grilled some burgers, hung out, then watched the fireworks show on TV.  We saw the fireworks 3 years ago in Seattle (lake union) and that was enough for me to experience what it’s like.  The crowd and the traffic wasn’t worth it at the end!  We are also celebrating Riley’s 1st birthday and it’s such a joy to see him spoiled by my In laws. He loves all of the gifts and the attention he gets (as always).  We had burgers, hotdogs, salads, and chocolate cake! I hope that you guys had a fun and safe weekend.

Flat Iron Grill Take 2:)

We had dinner again at another local resto here in Issaquah, Flat Iron Grill!  It was so nice yesterday that we wanted to enjoy dinner outside, al fresco style!  I ordered the same steak last time we we’re here but the experience wasn’t the same, it was still a nice time with my husband:)  Have a fun and safe 4th of July weekend everyone:)

Panera Bread Lunch

To celebrate our Riley’s 1st birthday, we had lunch at Panera Bread and just enjoyed the sunny weather!  Hubby was working at home but quite busy, so we wanted a quick lunch! We love Panera’s mac n’ cheese and their sandwiches:)

Happy Birthday Riley!

Our Schnauzer, Riley, turns 1 today!  He was only 10 weeks old when we got him in a pet store last year! He’s such a joy for us and life is so much fun with him:)  Although there are times when it can be stressful and expensive too, like the time he ate my scrunchy and we had to go to the ER in the animal hospital, and just last week we have to bring him again because he’s been acting strange like swallowing something but there’s nothing to swallow.  Everything is cleared from the vet, they checked his labs and he’s back to his old bouncy playful self again!  We plan to have a little celebration when my In-laws are back from their vacation next week!  Here are some of the pictures of our Riley!
