What I have worn lately:

This is a Rachael Ray recipe that I made couple of weeks ago, the soup was decent but I prefer Ina Gartens tomato soup recipe. Â What I really like about this dish is that it’s so easy and I have all the ingredients needed in my pantry so if we want “fresh” tomato soup I will most likely do this recipe.




Char the peppers on all sides over an open flame on a gas stovetop or under a hot broiler (with the oven door cracked to avoid steam buildup in the oven). Put the charred peppers in a bowl, cover, and let them rest until cool enough to handle, about 10 minutes.
Meanwhile, heat the extra-virgin olive oil in a soup pot. Add the garlic, carrot, celery, and onions to the pot and season with salt and pepper, to taste. Cook until the vegetables soften, about 10 minutes, then put them into a food processor with the diced tomatoes. Seed and peel the peppers and add them to the processor. Puree the mixture until smooth, then pour it into soup pot and stir in the stock.
Heat a panini press or a large heavy skillet. Make sandwiches using 2 slices of cheese and 2 slices of ripe tomato on 4 of the bread slices. Sprinkle with salt and pepper, to taste, and top with some torn basil. Cover with the remaining 4 slices of bread and add them to the panini press or hot skillet. If using a skillet, top with a second smaller pan and weight it down with heavy cans. Press the sandwiches to toast and melt the cheese, a few minutes on each side or 5 minutes in a hot press.
Serve the soup in bowls with the Panini alongside.
This is my late post of our Easter weekend. Â We had a great Easter, spent some time with family and attended Church service. Â The weather was just perfect too. Â Enjoy the pics!




























I prepared this last week and turned out really yummy. Hubs and I really like meatballs. Â I usually have it with rice but I know here in the states it’s usually with pasta. This is the inspiration of the dish at For the Love of Cooking.







My Fred Meyer shopping this week:

My favorite deal is the cereal, they’re on sale for 2/4, I got it for 3/$5( I used a 1/3 coupon). I think it’s good price because normally this kind of cereal cost around 4.50$ each.
The Organice Juice is Buy 1 Get 1 free,I really like mango juice so I’m excited to try this drink. The Olive oil is pretty good deal too.

I’m loving my colored jeans lately and I’ve been wearing them a lot! So comfy and very spring (bring on the colors!)












It’s nice to be back from our little vacation and I only shopped for the basics like milk and bread this week. Â We ate out a lot this week so Hubby and I are not really planning to cook for the rest of the weekend especially since we’ll eat out again this Sunday to celebrate Easter:) So this is what I got this morning after sales and coupons (I used store coupons) I paid $30.

I had some great savings this week with cereals! Â I was able to print the 4/4 kellogg’s coupon, and earlier this week Safeway had a cereal sale (BUY 8 promo thing),so from original price of $3.99 and the promo sale plus coupon, I was able to get it at $.99 each! SCORE!!! The Nivea lip balm was free because it was on sale for $.99 and I used the $1 coupon. Â I was a happy shopper:) Â The Safeway trip was really quick because I had no plans to buy anything else, I just wanted to use the cereal coupons so that left time to go check out Target! Â Our Safeway and Target are in the same area so I don’t have to drive again just to go to another store (saves gas!) and I’m so glad that I checked Target out because I got a lot of great deals there too.
