Linguine with Shrimp Scampi

Hello Friends! I wanted to share a simple but delicious recipe that I prepared tonight. It’s Ina Garten’s Shrimp Scampi recipe (https://www.foodnetwork.com/recipes/ina-garten/linguine-with-shrimp-scampi-recipe3-1916619 ). This dish will be perfect in the summertime, fresh lemons and pasta!YUM 🙂 The kids had meatballs and linguine because they’re not eating shrimp right now.

We had a quiet day at home today! With all the crazy things going on right now, making our home cozy and happy is what we chose to do. Read our Bibles and praying for our country!

Meal Ideas

Hello Friends! Happy Monday:) I did a little inventory of my freezers/Ref and pantry today. I really want to minimize food waste in my home, if not eliminate it entirely, and save money by being intentional with what we buy and eat. It starts with me because I’m the keeper of our house and prepare our food most of the time. My Hubs sometimes cooks on the weekends, he bakes our bread and treats! I don’t like baking! HA

We have more than enough food stored up here (Thank You, Jesus!), and will probably just need to get milk and fresh produce to supplement our meals. My list will come in handy this time. I’ve been looking around for simple and family friendly meals online (tons on Pinterest!).

Hubs baked us bread last night and it was good. He really wanted to use his new baking gadgets that he got last Christmas.

Meal Plan/Ideas this week:

We had Slow cooker Barbacoa beef tacos tonight (last night too). We don’t mind leftovers lately because it just make our lives easy come dinner time.

Weekend Fun!

Hello Friends! Hope you had a wonderful weekend. We had a nice couple of sunny days here so we spent time in our neighborhood park. Kids love it for just running around. Mia also started her soccer class. It was supposed to start last year but was delayed due to Covid, since the guidelines keep on changing. She was so excited to play soccer (she knows her Daddy use to play a lot of soccer). It was fun to see her being competitive with the other kids!HA

We also went to do our grocery at another city (35 minutes drive), we live in an area where the closest grocery store is 4 mins drive! Just for a change, see another area, get cheaper groceries! I was happy with our savings:)

Hello!

Hello Friends! Gosh, it’s been a while since I’ve been here, with the holidays and the craziness in the world plus my blog was acting up I just didn’t have the energy to post things here. Hubs fixed my blog issues and hopefully things will be better now. Anyways, Happy New year friends! I pray that you all are safe and healthy. We are doing great here, it’s been rainy, cold, gray in our side so we are cozying up at home. We play games, read books, watch shows (just finished COBRA KAI!HA).

We had a wonderful Christmas and New years with our family. Lots of food and family time. We are excited with the coming New year because Hubs and I have goals that we want to achieve! We continue to pray for Gods wisdom as we pursue them.

Happy Birthday Mia!

Hi Friends! How are you all doing?! Earlier this month we celebrated Mia’s birthday. We had a simple celebration for her because we are still in this pandemic and large gatherings are still not allowed. To be honest, we just don’t have the space to have a lot of people over and social distance, etc. The day of her birthday we had lunch at the local Italian restaurant and had pizza and meatballs *her fave! We then let her choose a toy that she liked at a local toy store. She picked a toy school bus:) To end the day we got cake pops from Starbucks.

We then had a late weekend celebration with my In laws. She wanted a Paw Patrol theme, she’s really into that lately. I made roast pork belly for dinner. It’s been a while since I made roast pork, it turned out YUMMY! We also had crabs, shrimps, and oysters!

She got lots of nice gifts from our family! The big gifts were the Paw Patrol Tower and Peppa Pig shopping mall! Thank You to our families for your generosity:) Happy Birthday to our Mia Boo! You are such a Joy to us. Thank You Jesus for gifting us Mia James!

Hello October!

Hi friends! We’ve been enjoying some fall weather this week! Leaves are starting to change their colors and something is in the air that tells me the HOLIDAY season is upon us! HA! I’m not really into holiday decor/pumpkin everything type of person (I do decorate for Christmas!), but I do try to add a little something into my everyday life that seems fitting for the season. Last week we shopped at Trader Joes and they had lots of fun stuff that I don’t mind trying this month.

I’m excited for October because it’s Mia’s birthday month (no party for her because of covid) but we still want to make it a little special for her! She is into paw patrol lately so she’ll get some paw patrol stuff for her bday gifts.

This month I plan to do lots of “cozy” things! HA! My sister is with us and she’s also into Hygge lifestyle. We plan to declutter, drink lots of coffee, home cooked meals, candles, fireplace, reading books, and HALLMARK movies too!

Summer Trip!

Hello Friends! How you all doing? I know it’s official Fall season but I wanted to share what we did last summer:) We visited friends in Idaho and had a wonderful trip. We needed to just get out of WA and spend time with friends. Lots of sunshine and time in the water ( we did pool, beach, falls!). I was a little anxious about how the kids would handle a long road trip, but thankfully they did well! Thank you, Jesus!:) Only 2 or 3 meltdown in the car if I recall.

We also did our yearly visit to the Ocean here in WA! Mia had so much fun playing in the sand and flying kite for the first time. The weather was not the best though because of the fog and smoke from the fires that’s happening here in WA and California. No smores on the beach and BBQ outside due to strict policy about fires!

Summer!

Hello Friends! How are you all doing? Things are “slowly” getting back to normal here in our area. I see traffic happening and I see a lot of families out for picnics and at the lake/beaches (maybe because of the weather!). How’s your summer going? It’s been hot here so we’ve been taking advantage of that and trying to go out most weekends. We’ve been to the lake near us because you can still social distance and not worry about wearing mask.

So our garden is a big failure this year! I don’t know why but normally by this time I’m dehydrating our tomatoes because of abundance but this year it’s 0 tomatoes, it’s pathetic. Aside from our roses and hydrangeas everything in our vegetable box is pathetic looking!

Uncertain times!

Hello Friends! How are you all doing?! We are living in chaotic times right now with the pandemic and riots, protest,etc! It’s so overwhelming looking at the news and what’s happening in our state too. As for us here at home, we continue to pray for healing, peace and justice for our country and the world. Come quickly Lord!

A couple of weeks ago, we had our family here at home because Zach wanted to try his sous-vide machine (it was a Christmas gift 2 years ago) and he finally wanted to use it. We had steak and we really liked the result.

If it’s not raining we do try to get outside and check out our garden’s progress. Sad to say some of our peas didn’t make it. Our zucchini is looking great right now! Can’t wait to see what we’ll end up harvesting soon.

Our Mother’s Day!

Hello friends! How’s it’s going?! We are still in the “stay at home” order from our Governor here. It’s been a gloomy week (rain almost everyday) so nothing new is going on here. Aside from me taking care of the kids , watching Hallmark movies (Christmas movies are my fave! HA!) and hanging out with Hubs. Everybody is healthy, but life is pretty mundane right now. I’m not complaining though:)

Hubs is finally done with our small vegetable garden and so far the snails are not eating anything! UGh! They’re the worst. I’m looking forward to harvesting this year.

We had a wonderful mother’s day at home. My MIL and DIL also celebrated their bdays so we just had a combined celebration. Hubs got me flowers and a hanging flower basket. My DIL grilled burgers and we ordered sides from Met Market and got their chocolate cake too. It’s my favorite cake! SO good! I have no discipline when it comes to their chocolate cake!HA
