Hi Friends! How did your weekend go? We did a lot of errands, when I say errands, I mean shopping! We went to an Asian market in Seattle (traffic was so bad!) and got some Filipino products that I wanted. The main reason we went there was to get Ox tail meat because I wanted to make Kare-Kare for our Sunday dinner with my In-laws. Kare-kare is a filipino dish made of oxtail stew in thick peanut sauce and vegetables (served with shrimp paste). My In-laws liked it, especially my DIL (he’s such a foodie and a food “adventurer”, he will try anything!). We also celebrated Mia’s 7 months, and her daddy baked cupcakes for her! We love you Mia Boo (her new thing lately is giving us kissy ducky face! such a funny little girl:)

Hello Friends! Happy May 1st (can’t believe it’s already May). Hope you had a great weekend, ours was quiet! We enjoyed a nice spring day last Friday evening and got out of the house to have a yummy dinner at Cheesecake Factory! The Hubs and I started a Netflix series called “The Night Shift” and so far we’ve been enjoying the medical drama!
Saturday, my SIS visited and spent time with Mia! Thanks Juju for loving on Mimi, she’s blessed to have an auntie that loves on her:)

I plan to clean and declutter this week! Hello Spring Cleaning! Wish me luck, I need all the motivation in the world!
I plan to stick to my meal planning this week! It saves us money and time. Lord help me on this because I’m not very good at consistency, and I always find my self giving in to my unhealthy cravings like RICE (unlimited!) HA! Tonight we had shrimps and mashed potato!
Here’s my meal plan for the week:
M: Shrimps and Mashed potato
T: Chicken curry,rice
W: My In laws usually take care of the food, they come visit us and bring food (I know we’re so blessed). We had salmon, crab cakes,mashed potato and green beans last Wednesday! YUM..
Th: Beef Stroganoff, salad
Friday: Chicken Wings, salad or take out
Saturday: left overs or sandwiches (something simple)
Sunday: Not sure yet (we’ll have my In laws for dinner!)
I only plan for dinner because our breakfast and lunch are the usual stuff like cereals,yogurt,toast,eggs. Lunches are left overs,sandwiches, or junky fast food.
Happy Friday Friends! What a gorgeous spring day here at the PNW! The Hubs and I wanted to take advantage of the nice weather so we did happy hour at the local Mexican restaurant in our neighborhood! Mia was so good! She was just quietly observing the place!

Anyways, I wanted to share the Deviled eggs recipe that Hubs made last Easter! He made two kinds (smoked salmon and one with tobiko), both were good! I personally preferred the smoked salmon just because I’m not a fan of tobiko. If you like deviled eggs and want to try other “flavors” in it, try either these two recipes and you might like it!
Smoke Salmon Deviled Eggs (recipe courtesy of Ina Garten)
Ingredients (make 16 appetizers)
8 extra large eggs
1/2 cup sour cream
2 ounces cream cheese, at room temperature
2 tablespoons good mayonnaise
1 tablespoon freshly squeezed lemon juice
2 tablespoons minced fresh chives,plus extra for garnish
4 ounces good smoked salmon,minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 ounces salmon roe
Directions:
Place the eggs in a pot large enough to hold them in a single layer. Cover the eggs with cold water and bring to a full boil over high heat. As soon as the water boils, turn off the heat,cover the pot, and let the eggs stand for 15 minutes. Drain the eggs and fill the pot with cold water. Set aside until the eggs are cool.
Peel the eggs and then slice them in half lengthwise. Remove the yolks carefully. Place the yolks in the bowl of an electric mixer fitted with the paddle attachment and arrange the whites on a platter in a single layer with the cut sides up and sprinkle with salt.
To the egg yolks, add the sour cream, cream cheese, mayonnaise, lemon juice, chives, salmon, salt, and pepper. Beat on medium speed until fluffy. With a small spoon, fill the egg whites with the egg yolk mixture. Cover loosely with plastic wrap (you don’t have to flatten the filling) and refrigerate for 30 minutes for the flavors to blend. When ready to serve,garnish with a dollop of salmon roe and some extra chopped chives. Sprinkle with salt and pepper and serve.
Tobiko and Chive Deviled Eggs (www.foodrepublic.com)
Ingredients:
6 hard boiled eggs, cooled and peeled
2 tablespoons Japanese kewpie mayonnaise
2 tablespoons tobiko (whichever color you like best) plus extra to garnish
2 teaspoons very finely chopped chives, plus extra to garnish
kosher salt and freshly ground black pepper
Directions:
Halve each eggs lengthwise and carefully transfer the yolks into a medium mixing bowl.
Add mayonnaise and mash yolks using a fork until almost smooth.
Gently fold in the chives and tobiko (you don’t want to bruise or break either) then season to taste with salt and freshly ground black pepper.

We had a relaxing Easter weekend with family! Went to Church and celebrated Easter dinner at my Sister In-law’s house. We had a honey baked ham,mac and cheese, potato gratin,salads,rolls (lots of yummy food as usual)! Zach made deviled eggs with tobiko (it’s ‘different’ according to Grandma Jean!). Mia made everybody happy because she didn’t cry and everybody was able to hold her! She got an Easter basket from her grandparents, and us! She was actually checking her basket and holding the goodies when we got home! Here are some of our Easter pics (I took thousands of pics:)!

Hello Friends! A couple of weeks ago, the Hubs and I went out to John Howie Steak, this is our favorite steakhouse in Seattle/Bellevue. We’ve visited a lot of steakhouses but this is always our go to for special occasions and whenever we are craving steak. Although this is one pricey restaurant, the Hubs and I always love the service (superb!) and the steaks are always cooked perfectly to our liking (melt in your mouth goodness!). We’ve been to their happy hour also and that didn’t disappoint! The Hubs and I are already looking forward to our next visit:)

I’ve been friends with Faye for 7 years now and she’s also a Filipina like me. She used to live and work in the same city where I grew up, but we only met each other here in Washington state! What a small world! Although we don’t get to see each other often, she’s one of the most authentic people I know! Thanks, Madame Faye and Roger for the sumptuous Filipino dinner!

Hello friends! Happy Valentines day, I hope its a great one for you and your loved ones! We stayed home today, but this weekend the Hubs and I will go have dinner and the grandparents will watch our Boo! This is our 11 years together in celebrating Vday! We normally keep our Valentines celebration simple. My hubs asked me if I wanted something for Vday, and told him I really don’t want anything. No flowers, chocolates. I prepared Filipino Escabeche (sweet and sour whole fish), Ribeye Steak, then we had hot chocolate to end the night!
Hello Friends! Our little Mia Boo had a cough this week so we stayed home, except to do some grocery shopping. Aside from the cough, she’s good, but we still called her Pediatrician just to be sure. I discovered that she likes the baby Vicks! It’s the non-medicated ointment, so no worries! I swear she naps easily after I put a little on her chest and neck! Or maybe it’s just a coincidence? Who knows! I still find it funny…my sisters were laughing when I told them about it. I had to take a picture and show them. HA!

Hello friends! Hope you were able to relax and enjoy your weekend! We watched the Superbowl at Grandmas place. She is a big football fan and loves the Seahawks (but I think she was cheering on the Pats yesterday!). The hubs and I could care less about football ( I prefer basketball) but it was fun hanging out with the family and enjoy the crazy game!

We had a snow day today (Monday) and we took some pictures with Mia but didn’t get around to building a snowman! When she’s a little older though, we’ll have lots of fun in the snow for sure! Zach and Riley, however, did spend some time outside today enjoying the snow!
